I have a friend that is my go-to for recipes…do you have a person like that!?! She suggested her broccoli cheddar soup for dinner the other night and I believe it is a hit!!!
It only took about 30 minutes to make and even the kiddos love it. 🙂
Broccoli Cheddar Soup Recipe
Ingredients:
- 1 finely chopped onion
- 1/4 cup flour
- 1/4 cup and 2 Tbs. butter
- 2 cups whole milk
- 2 cups chicken stock
- 1 cup finely chopped carrots
- 2 cups finely chopped broccoli
- 2 cups cheddar cheese
- salt and pepper.
Directions:
- Saute onions in 2 Tbs. butter, then add flour and 1/4 C butter to make a roux.
- Stir for approx. 5 minutes, then whisk in whole milk and chicken stock.
- Simmer for a few minutes then add carrots and broccoli.
- Let cook for 20 minutes, then add cheddar cheese and salt and pepper for taste.

I suggest putting the finished soup in a food processor before serving for a smoother, creamer soup!! JUST MAKE SURE TO TAKE OUT THE “PUSHER” AND HOLD A TOWEL OVER THE OPENING! Hot soup will cause it to shoot out of the lid! 😉

I have been making broccoli cheese soup…well since I started cooking I guess, but the Hubs recently said that it, “kinda tasted like gravy”. Nice huh? Then I watched the Pioneer Woman and saw how she made it. Admittedly, her recipe was way better than mine and your’s/&Tiffany’s reminds of hers. She does add a nutmeg…I didn’t know that adding a dash of nutmeg to it would make it taste different. Now the Hubs loves it. 🙂

I love broccoli cheese soup. When I first tasted it the restaurant/coffee house was serving it in bread bowls. When the restaurant/coffee house was sold they stopped serving it. Then I found a micro brewery who not only served it but they added some touches that made it even more delicious! First they made beer bread. They just made a regular pumpernickel type bread in which they used their own brewed dark beer! They served it in a bread bowl made from the beer bread (with a couple extra slices on the side because that bread was so popular) and they also used dark beer to flavor their broccoli cheese soup! All the alcohol cooked out of everything and the left-behind taste was shockingly delicious!! I would take my dog to their restaurant and we’d sit outside and I’d order an extra slice of the beer bread for him and he loved it too! They had an outdoor seating area and I could tether my dog to the outside fence and they would bring us a nice big bowl of water for Cujo along with some kitchen treats when we showed up for lunch or tea. Hmmmm….Something to scrap about?
