Banana Bread with Einkorn flour

Ingredients

  • 2 very ripe bananas
  • cup of melted butter
  • ¾-1 cup of cane sugar
  • 1 egg beaten
  • 1 teaspoon of vanilla
  • 1 teaspoon of baking soda
  • large pinch of salt
  • cups of Einkorn flour or your choice
  • optional walnuts or pecans

Instructions

  1. Preheat your oven to 350°F and grease a 4x8-inch loaf pan, I like to use grape seed oil spray.
  2. In a large mixing bowl, mash the bananas with a fork until they are smooth, then stir in the melted butter.
  3. Add the baking soda, salt, sugar, beaten egg, and vanilla extract, then the flour. Stir the ingredients until they are all combined well, but don't over mix. If you like nuts, add about a hand full or whatever your preference is...it doesn't have to be an exact science.
  4. Pour the batter into the loaf pan and bake for about 50 minutes or until a tester inserted into the center comes out clean.
