BEST Baked Potato Soup


  • 2-3 large potatoes
  • 1 small onion chopped
  • 2 Tbs. butter
  • 3 Tbs. flour
  • 2 tsp. dill or 1/2 tsp. dried dill
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 4 cups milk
  • 1 1/4 cup shredded cheese
  • optional bacon and chives


  1. To get this made in 30 minutes, start by cooking the onions in hot butter until tender in a dutch oven or medium size pot.  Stir in flour, dill, salt, and pepper.  Add milk all at once.  Let this cook for 12 to 15 minutes or until thick and bubbly. Be sure you stir continuously.
  2. Once you get all the above ingredients started and while they cook, bake your potatoes int the microwave.  I wash, puncture each potato with a fork, then place them on a microwave safe place.   Cover the plate and cook for 5 minutes at a time, rotating them until they are soft.  This normally takes around 15 minutes.  If you would prefer to bake the potatoes in the oven, you can bake them for 40-60 min @425.  Let them cool then scoop out the pulp.
  3. Add the pulp and 1 cup cheese of cheese to the mixture on the stove top.
  4. Top with remaining cheese, bacon, and chives (or green onions)
